For the holidays and occasions where there may not be enough time to complete a portrait, consider getting a gift certificate.  If someone has lost a pet it makes a good gift especially if you don't have access to the photos.   Signed and numbered certificates come in a handsome card with a special area for your inscription.   They will be sent to you so that you may personalize them and send them on to the recipient.
